Fast and easy holiday recipes: Snow pudding recipe, a dessert for hot days

This snow pudding recipe is a dessert for Summer days. It is called snow pudding because the top of the dessert resembles snow.

INGREDIENTS

2 big lemons

3/4 cup sugar

2 heaped Tablespoons Maizena (cornflour)

2 cups of water

2 eggs, separated

3/4 cup milk

2 Tablespoons sugar

1 teaspoon vanilla essence

pinch salt

Squeeze the juice out of the lemons.

Put 2 cups of water in a pot, add the 3/4 cup sugar and the lemon juice, mixing well. Quickly add the Maizena (cornflour). Cook on the stove over a low heat, stirring all the time. Keep on stirring until the appearance of the mixture is thick and glossy. Remove from heat and let cool.

Beat the egg whites until peaks are formed and add to the cooled mixture. Stir lightly and pour into a pudding bowl and place in the refrigerator.

Custard for Snow Pudding

Bring the milk to the boil in a saucepan.

Meanwhile, beat the egg yolks, 2 Tablespoons of sugar and salt together in a bowl.

Pour the hot milk into the egg mixture, stirring well. Return the mixture to the saucepan.

Cook over low heat, stirring all the time, until the mixture coats the spoon. Make sure that the mixture does not boil. Remove from heat and stir in 1 teaspoon of vanilla essence.

Remove from stove and cool.
